Performance Meals USA
If you're a serious athlete in the Twin Cities, you may have heard of Performance Meals based out of Robbinsdale. Frontman and owner Adrian De Los Rios, along with a hard-working crew of chefs, puts out hundreds of meals every week and delivers the food to gyms for his clients.
I spent a few nights with Adrian and the guys, mostly to capture the behind-the-scene moments of their work. They typically work late nights so that the food is delivered fresh the next day. Not many people see what they do, or know exactly what it takes to produce healthy food in mass quantities. For now, they share a space with Travail Kitchen and Amusements and are kind of like health food gremlins with nighttime operational shenanigans on their to-do lists. Loud music, bright lights, and midnight healthy eats comin' in hot.
What I find so cool about the business is that Adrian went from serving about a hundred meals each week to around a thousand in only a year's time. It became more work than he could keep up with and he quickly hired more employees. Adrian started with an idea relatively small and said "yes" as opportunities came his way.
As for what Adrian is like--he's made of boulders and marshmallows. What do I mean? His muscles are as strong as his personality is kind. I watched him single-handedly strain 100 pounds of pasta like he was pouring feathers into a bucket. He is not to be messed with. But he's also one of the nicest guys I've met in the food industry and he seems to live with an attitude of thankfulness. He's approachable, and wears a huge smile on his face. His employees love working for him and his clients love eating his food.
